One of the sweetest cookie stories ever surrounds Dorie Greenspan’s World Peace Cookies, a recipe I’d saved for several years and finally tried.
According to Greenspan (1) “The World Peace Cookie lives up to its name: if everyone had it, peace would reign over the planet.”
The recipe is not new. It’s a chocolate shortbread cookie or sablé originally created by expert French pastry chef Pierre Hermé. Greenspan published it in her 2002 book Paris Sweets with its original name the Korova.
After one of her neighbors called it The World Peace Cookie, the name stuck. It is so special that Greenspan put the World Peace Cookie on the cover of her 2016 book, Dorie’s Cookies. According to her, millions have made it. Food52 (2) included it in their Genius Recipe collection in 2013 and The Splendid Table (3) published it in 2016.
I made six dozen World Peace Cookies for a party themed around an anniversary, charity donation and cookie exchange. Not only do they taste great, they’re practical for large-batch baking. You can make the dough ahead of time, shape into logs, and chill or freeze; then slice and bake cookies when you’re ready. I was feeding gluten-free folks and it worked well with Bob’s Red Mill All Purpose Gluten-Free Flour.
To dress up the World Peace Cookies for the holidays I sprinkled them with naturally colored, naturally flavored coarse sugar and a pinch of coarse salt. In a hurry to bake dozens, I took a shortcut and used miniature chocolate chips instead of finely chopping bittersweet chocolate.
Peace on Earth is sentiment shared widely this time of year. If enough of us bake and share the World Peace Cookie, perhaps we’ll inch closer to achieving the goal.
